Vegetarian Nut Loaf



Looking for a meat alternative to your Christmas dinner this year? Add this delicious homemade Vegetarian Nut Loaf, where you can get the satisfaction out of baking your very own substitute using your Panasonic Breadmaker.




Put the butter, onion, celery and herbs in a microwave safe bowl and cook on HIGH Microwave for 5 minutess to soften.


Add the nuts, tomatoes, cranberries, apricots, breadcrumbs, salt, pepper and chilli to the onion mixture. Then stir well and add the eggs and cranberry sauce. Mix until well combined.


Line the bread pan with a 2lb loaf tin liner.


Spoon the mixture into the lined bread pan and place in the bread machine.


Select BAKE ONLY and add 50 mins to the timer.


When cooked leave to cool, before carefully removing.

50 g Butter
1 Onion finely chopped
1 Celery Stalks chopped
1 tsp Mixed Dried Herbs
225 g Mixed Nuts coarsely chopped
400 g Tomatoes 1 can
150 g Dried Cranberries
50 g Dried Apricot
150 g Bread Crumbs
¼ tsp Chilli Flakes
Salt and Pepper to season
2 tbsp Cranberry Sauce
2 Medium Eggs lightly beaten
