1 tbsp Coconut Oil

2 tbsp Maple Syrup

64g OatsGluten Free if required

2 tbsp Flaked Almonds

1/4 tsp Ground Nutmeg

1/4 tsp Ground Mixed Spice

40g 70% Dark Chocolate

This tasty vegan spiced chocolate granola recipe is by Tamsin (@CupfulofKale). It’s perfect as a breakfast, snack or pudding!

Place the coconut oil and maple syrup in a microwaveable bowl, cover and cook on high for 30 seconds. |

Add the oats, almonds, cinnamon, mixed spice and nutmeg and stir until coated. Place back in the microwave, cover and cook on high for 30 seconds. Stir and repeat twice again so it is cooked for 90 seconds in total. |

Tip onto a baking tray and leave to cool and harden. Chop the dark chocolate into small chunks and add once the granola is cooled. Eat straight away or place in an air tight container for 2-3 days. |
