50g Soft Apricot

50g Dried mixed fruit

Directions
This tasty festive gluten and dairy free Christmas rice pudding is the perfect dessert dish to feed the family. You can make this in your microwave in only 20 minutes!

Place the rice, 1 cup of water, cinnamon sticks and cloves in a large microwave safe bowl and cook on high for 5 minutes. |

Stir the rice, add 2 cups of water and microwave on high for another 10 minutes, until the water is absorbed and the rice is cooked. |

Mix in the soya milk, apricot, dried mixed fruit, glace cherries and honey. Cook on high for another 5 minutes. |

Sprinkle with ground cinnamon and serve straight away. |
