Place the rice, 1 cup of water, cinnamon sticks and cloves in a large microwave safe bowl and cook on high for 5 minutes.

Stir the rice, add 2 cups of water and microwave on high for another 10 minutes, until the water is absorbed and the rice is cooked.

Mix in the soya milk, apricot, dried mixed fruit, glace cherries and honey. Cook on high for another 5 minutes.

Sprinkle with ground cinnamon and serve straight away.
