Steps

For the Rice Pudding

Put the rice, sugar, orange zest, cardamom pods, and milk in a large pyrex dish and stir well.

Heat on HIGH for 10 minutes then stir well to break up any clumps of rice.

Cover the dish and heat on SIMMER for 35 minutes, stirring every 5 minutes - this will help to prevent the milk from boiling over.

Set aside to cool slightly while you prepare the compote.

For the Compote

Put the berries, orange juice, and sugar in a bowl with a lid and heat on HIGH for 2 minutes, stir and then heat for a further 2 minutes on HIGH.

Serve in bowls with the rice pudding.
