Start off by making the cranberry sauce - add all the ingredients into a small saucepan and bring to a quick boil. Lower the heat and allow to simmer for 15-20 minutes until thickened, then take off the heat.

In a small bowl, mix the flour with 4 tbsp of milk until a paste is formed.

Slowly add the rest of the milk followed by the orange juice, whisking continuously to avoid any lumps.

Add in the maple syrup, oil, spices and orange zest. Whisk again until combined.

Heat a little coconut oil in a frying pan. Dip each of the bread slices into the batter and leave for a few seconds to allow the bread to soak up some of the liquid.

Fry the toast on each side for a few minutes until golden brown.
