Vegan Nut Roast



Looking for a festive alternative for your Christmas dinner that’s jam packed with cranberry? Then look not further! bake your vegan own vegan nut roast at home using your Panasonic Combination Microwave whilst there’s still room for your roast potatoes in your oven.




Cook the rice according to the instructions in the cooking charts and drain.


Put the butter, carrots, onion and garlic in a microwave safe bowl and cook on HIGH MICROWAVE for 5 mins, or until soft.


Add the mushrooms, rice and herbs to vegetables and stir together. Then cook on HIGH MICROWAVE for 5 minutes.


Puree the mixture.


Stir in the walnuts, brazil nuts, pine nuts, salt and pepper.


Lightly grease the loaf dish and level the mixture. Put the wire rack in oven cook on Combination: 180ºC +SIMMER MICROWAVE for 35- 40 minutes.


Garnish with the sprigs of rosemary.

75 g Brown Rice
75 g Vegan Butter
2 Carrots peeled and grated
1 Onion
1 Garlic Clove crushed
250 g Button Mushrooms chopped
2 tbsp Parsley chopped
1 tbs Rosemary chopped
125 g Walnuts toasted and chopped
125 g Brazil Nuts toasted and chopped
50 g Pine nuts toasted
Salt and Pepper for seasoning
Sprig of rosemary for garnish
