Vegan Mushroom & Chestnut Risotto



This fantastic vegan mushroom and chestnut risotto is quick and easy to make and tastes delicious! It is the perfect healthy and hearty dish for the whole family all in just 15 minutes.

Dice the onion, slice the mushrooms in halves and mince the garlic.


In a large casserole dish, place the oil and the diced onion, mushrooms and garlic. Cover and cook on High microwave for 3 minutes.


Stir in the arborio rice, and add the hot stock. Cover and cook for 10 minutes on High microwave.


Stir in chestnuts, and spinach leaves and cook for 1 minute for the spinach to wilt. Season with salt and pepper. Leave the risotto to stand for about 10 minutes, then serve.
