Line a baking sheet with grease proof paper.

Break the chocolate in to a large MW safe bowl and heat on HIGH for 15 seconds at a time until melted.

Stir half of the pomegranate seeds and the salt and ginger into the melted chocolate, pour the mixture in to the lined baking tray. Spread evenly to make a rectangle.

Sprinkle the remaining pomegranate seeds over the top and put in the fridge for about 30 mins to fully set.

Break the bark into chunks and enjoy.
