Add the oil, spring onions, garlic, stock, spices, chickpeas and apricots in a casserole dish, mix and cook uncovered on high for 5 mins.

Then reduce the heat and cook on medium for another 5 mins.

Remove from the microwave and stir in the shredded turkey and let stand for until the turkey is warmed through.

Serve topped with veggies and herbs.

4 Spring Onions Sliced
1/4 tsp garlic Minced
3/4 tsp Ground Cinnamon
3/4 tsp Ground Cumin
1/2 tsp Smoked Paprika
625ml Vegetable Stock
400g Chickpeas Rinsed and drained
100g Soft ready-to-eat dried apricots Halved
250g Shredded leftover turkey
1 Small bunch of chopped fresh coriander
To top
Fresh sliced veggies
