Tray Baked Chicken with Butternut Squash, Apple & Sage






Toss everything together, (apart from the apples and honey), in a roasting dish and season with salt and pepper.


Arrange the chicken so it sits neatly amongst the vegetables and then place on the glass shelf in the middle shelf position and cook on CONVECTION 200ºC and SIMMER MICROWAVE for 20 minutes.


Remove the dish from the oven. Add the apples turning in the dish to coat in the juices and drizzle with the honey and cook for a further 20 mins on CONVECTION 200ºC + SIMMER MICROWAVE until everything is golden and cooked through.

8 large Skinless chicken thighs
150 g Smoked bacon lardoons or pancetta
1 Red Onion cut into 4/6 wedges
1 Butternut Squash peeled and cut into wedges
4 Garlic Cloves unpeeled
10 g Fresh sage chopped
2 tbsp Olive Oil
Pinch of Dried Chilli Flakes
½ Juice of Lemon
Salt and Black Pepper for seasoning
1 tbsp Honey
2 Apples cut into wedges
