1 Onion

4 Garlic Cloves

150g Chestnut Mushrooms

1 Tin of Chopped Tomatoes

8 Sundried Tomatoes

1 tbsp Balsamic Vinegar

50ml Soya Cream

30g Fresh Basil Leaves

2 Handfuls of spinach

500g Gnocchi

Directions
This is what pasta dreams are made of! Soft pillows of gnocchi in a rich sundried tomato, garlic and basil sauce. With chestnut mushrooms, spinach and shavings of vegan parmesan. All made in our combi microwave oven and ready in just 20 minutes. Just what quick and healthy weeknight meals call for!

Notes – Make sure the gnocchi is vegan, usually the ones in the dried pasta section are.

Finely chop the onion and add to a large microwavable bowl with 1 tbsp vegetable oil. Cover and place in the microwave on high for 1 minute. |

Crush the garlic and slice the mushrooms. Then add to the bowl with the onions, stir, cover and place on high for 2 minutes. |

Next add the tin of chopped tomatoes, chopped sundried tomatoes, balsamic vinegar, basil and soya cream. Stir, cover and place on high for 12 minutes. Remove, add the spinach and then cover whilst you cook the gnocchi. |

In a separate bowl add the gnocchi and pour over 750ml boiling water. Place in the microwave once the sauce has finished, cover and place on high for 5 minutes. Stir half way through. |

Drain the gnocchi, mix with the sauce and serve with some extra basil, pepper and some vegan parmesan. |
