Ingredients

1 Small Onion Finely Chopped
2 Garlic Cloves Finely Chopped
16cm Piece of Ginger Finely Chopped
A few Sprigs of Fresh Coriander And some to serve
2 Peppers Roughly Chopped
100g Cherry tomatoes Halved
2 Skinless, boneless chicken thighs Cut into chunks
2 tsp Curry Powder
1/2 tsp Turmeric
100ml Coconut Milk
100ml Chicken Stock
1/2 Juice of a lime,
1 tbsp Mango Chutney

A delicious, warm and hearty chicken curry dish. Super simple to make.

Steps

Place the onion, garlic, ginger and coriander in a large bowl with a tbsp oil, cover and cook on high microwave for 2 mins.

Coat the chicken in a little bit of flour.

Add the chicken, peppers, curry powder and turmeric stir well and continue to cook on HIGH MICROWAVE for another 2 mins.

Pour in the coconut milk and stock and cook on MEDIUM MICROWAVE for 15 mins, stir and continue to cook on SIMMER MICROWAVE for a further 15 mins.

Squeeze half the lime into the curry, add the mango chutney and a pinch of black pepper. Taste and add more lime if needed.

Scatter with some coriander to serve.
