For the Sourdough Starter

Mix the sourdough ingredients in a glass bowl. Cover with a damp tea towel and secure with an elastic band. Leave for at least 12 hours to prove at room temperature.

You will have enough starter for two or three loaves. Keep the remaining starter covered in the fridge for up to 2 days.

For the Sourdough Bread

When you are ready to make the bread, make sure the starter is at room temperature and add 250g to the bread pan.

Put the remaining ingredients except the *dried fruit, into the bread pan in the order listed above.

Select the "Sour Dough" program and press start. After the first knead approx 7 mins in or 4 hours 53 mins showing on the timer, add the fruit.

½ tsp Sugar
1 tsp Salt
2 tsp Cinnamon
130 ml Water
125 g Mixed Dried Fruits
