Ingredients

Adjust Servings:
4 Baking potatoes
30g Butter
50g Grated Cheddar Cheese
1 Large Onion Chopped
1 Crushed Garlic Clove
5ml Oil
1 tbsp Flour
500g Lean Minced Beef Or vegetarian mince
2 tbsp Worcestershire Sauce
4 tbsp Tomato Ketchup
400g Can of Chopped Tomatoes
120ml Beef Stock Or Vegetable stock
Salt and Pepper

Dish: 1.5 litre dish and baking dish.

 

A flavourful, dish to feed the whole family easily – who doesn’t love a warm jacket potato? Swap the minced beef for vegetarian mine and beef stock for vegetarian stock to make it veggie!

Cook the potatoes on HIGH MICROWAVE for 20 mins. When the potatoes are cool enough, carefully scoop out the inside and mash with the butter until smooth.

Place the onion, garlic and oil in the glass casserole dish, cover, place on the base of the oven and cook on MEDIUM MICROWAVE for 3 mins. Stir in the flour.

Place all other ingredients in the casserole. Stir well. Cover, cook on HIGH MICROWAVE for 10 mins, then MEDIUM MICROWAVE for 15-20 mins or until cooked.

Put the potato skins in a baking dish and fill with the mince. Top with the mash and then the cheese. Cook on GRILL 1 for 8-10 mins until golden.
