4 Salmon Fillets or 1 whole fillet
2 tbsp lemon juice
Mango Salsa
2 Red Chillies Deseeded and Finely Chopped
1 Mango Peeled and chopped into small cubes
1 Tomatoes Diced
Small Bunch Coriander Finely Chopped
1 Lime Juice of 1 lime

Preparing the Salsa

Deseed and finely chop the red chillies.
Dice the tomatoes.
Peel and chop the mango.
Finely chop the coriander.
Cut the lime in half.

Mix all the salsa ingredients together (red chillies, tomatoes, lime juice, mango and coriander) and chill in the fridge.

Place the salmon in a shallow container, add the lemon juice.
