1 Large Ripe Mango Peeled and sliced into fingers
4 Radishes Finely Sliced
1/2 Cucumber Deseeded and cut into cubes
1/2 Ripe Pineapple Cut into cubes
125g Bean Sprouts
125g Baby spinach
350g Firm Tofu Cut into cubes
1 Fresh Red Chilli
100g Unsalted Peanuts
Dressing
Extra Virgin Olive Oil
2 Juice of Lime
1 Zest of Lime
1 tbsp Runny Honey
1 tsp Sambal Oelek
1 tsp Tamarind
1 tsp Light Brown Sugar

This sweet, healthy, fruity Malaysian dessert is great for sharing after dinner or as a salad.

For the dressing, combine all the ingredients together, season and transfer to a jug.

Line the grill pan with some non-stick baking paper. Place the tofu cubes in the pan and grill on GRILL 1 for 8-10 mins turning until golden on all sides. 2 mins before the end of cooking add the peanuts to one side of the grill pan and toast until golden.

Arrange all the ingredients on a large platter and top with the toasted peanuts and fresh red chilli.
