1 Large Red Pepper Halved and deseeded
4 tbsp Hummus
2 Soft Flour Tortillas
1 tbsp Olive Oil
Salt and Pepper

A tasty lunch or dinner, these roasted pepper and hummus wraps are quick, healthy and vegetarian!

Steps

Pre-heat the GRILL on 1.

Brush the pepper halves with the oil and place cut side down on the enamel shelf.

Grill in the upper shelf position for 5 minutes or until charred. Remove and put them in a plastic bag and leave to cool.

When cool, remove the pepper, peel and discard the charred skin, then thinly slice the flesh.

Spread the hummus over the tortillas in a thin even layer and top with the roast pepper slices, grated carrot and some rocket leaves.

Season with salt and pepper then roll them up and cut in half to serve.
