Roasted Chicken with Cucumber Salad

Preheat microwave oven to 180 C.

Score the chicken skin, mix 2 tbsp oil olive with, salt, pepper and paprika. Toss to coat the chicken. Let it rest in the fridge for minimum 2 hours.

While the chicken is in the fridge, cut the veggies in irregular shapes and coat them in some olive oil, salt and pepper.

Make the cucumber salad:

Cut the cucumber into large pieces.

Sprinkle with salt and pepper, add chopped herbs. mix well and let it sit for 5 min. Add olive oil and lemon juice.

Add veggies, lemon and herbs to the bottom of the pot and then put the chicken on the top of the veggies

Transfer to the oven and roast for 45–60 minutes ( depends on the size of your chicken) or until the chicken is just cooked through. Serve with the cucumber salad.
