Roast Lamb with Maple Roasted Vegetables & Roast Potatoes

Steps

Make several incisions in the lamb and fill each with a slice of garlic and small sprig of rosemary. Drizzle with a little olive oil.

Place the lamb on the enamel tray on the glass turntable.

Choose which auto program you would like your lamb cooked (29) LAMB MEDIUM or (30) LAMB WELL DONE Enter the weight of the food and press START.

After cooking stand for 10 to 20 minutes.

Roast Vegetables

• Slice the parsnips, carrots, onion and apples
• Place in a large mixing bowl along with the garlic, chopped rosemary, maple syrup and generous pinch of salt and pepper and mix
• Place in a ceramic dish, then in your microwave oven at 200C for 30 minutes
• Remove from the oven and give it a little stir to move the ingredients around then add pomegranate seeds and place back in the oven for 15-30 minutes

Roast Potatoes

• Peel and cut potatoes into even sized pieces. Weigh the potatoes ready to enter on the auto program.
• Place ceramic dish. Add 1-3 tbsp of olive oil and a few cloves of garlic if using.
• Press the auto menu (23) ROAST POTATOES times for roast potatoes.
• Enter the weight of the potatoes and press start. Alternatively cook on CONVECTION 250ºC + GRILL 1 + WARM MICROWAVE for 30 mins or until golden and crunchy, turning and basting potatoes during cooking.
• Remove when cooked and garnish with salt, pepper and a fresh rosemary sprig.
