200g Cooked Puy Lentils
1 tbsp Olive Oil
1 Juice of Lemon
500g Roasted Butternut Squash
100g Kale Torn into bite size pieces
1 tbsp Flat Leaf Parsley Chopped
2 tbsp Toasted Hazelnuts Chopped

This delightful vegan dish is a great, healthy and hearty dish. Full of nutrients and protein, this puy lentils, squash and kale recipe is perfect for all occasions.

Steps

Put the cooked lentils in a bowl with 1 tbsp of olive oil and 1 tbsp of lemon juice, stir to combine.

Roast the squash whole on Convection 180C for 40 mins, peel and cut into bite size pieces.

Steam the Kale on STEAM 1 for 4-5 mins or until tender.

Arrange the lentils on a serving platter and arrange the roasted squash and kale on top.

Garnish with the parsley and toasted hazelnuts and squeeze over 1 tbsp of lemon juice and serve.
