Moroccan Chickpea Tagine

This delicious Tagine is so easy to make using your Panasonic Microwave! Simply add in your ingredients and make use of the microwave function – giving you a piping hot Maghrebi dish.




Add the onion, garlic and olive oil to the base of a glass dish and microwave on high for 3 minutes.


Add the harissa, syrup and spices to the pot and stir to coat the onion. Now add in the rest of the ingredients and stir well. Season with salt and black pepper.


Cover and cook on microwave high for 30 minutes, stirring every 10 minutes.


Top with the coconut yogurt, crushed pistachios, dukkha and fresh coriander. Serve warm with rice, couscous or quinoa.

1 Red Onion small diced
4 Garlic Cloves crushed
1 tbsp Harissa Paste
1 tbsp Syrup
1 tsp Coriander ground
1 tsp Ground Cumin
½ tsp Smoked Paprika

1 Courgette in ¼ moons
500 g Passata
100 g Dried Apricot chopped
Salt and Black Pepper for seasoning
1 240 g tin Chickpeas
