These mini lemon bundt cakes are tasty treats and are a fantastic pudding, perfect for sharing. You can prepare them in only 10 minutes and cook for 12-18mins.

 

Works best with the CF-873 Microwave.

Steps

Grease the mini bundt tins and pre-heat the microwave oven to 170°C.

Put all the ingredients for the cakes into a mixing bowl and mix until well combined.

Turn the mixture into the prepared tins.

Bake in the oven for about 12-18 minutes or until the cakes are golden brown.

Allow the cakes to cool in the for a few minutes then turn them out onto a cooling rack with a baking tray underneath to catch and drizzle.

Prepare lemon drizzle by mixing one cup of icing sugar with 1/2 cup of lemon juice.
