Directions
This delicious sweet homemade lemon curd is perfect for spreading on a slice of fresh homemade hard crust bread. It it’s easily made in the microwave!
Recipe makes 2 jars.

Place all the ingredients in the bowl and mix together well. |

Cook on HIGH MICROWAVE for 5-6 mins, stirring every minute to begin with, then every 30 seconds once the mixture starts to thicken. |

When the mixture stays on the back of the spoon, stop cooking or the eggs will cook too much. The mixture will continue to thicken whilst cooling. |

Fill the jars while the curd is hot. Keep in the fridge. |
