225g Self raising flour
115g, diced Butter
115g Sugar
40g, ground Almonds
1, zest & juice Lemon
2, medium Egg
4tbsp Milk
200g Blueberries
55g Icing Sugar

Lemon and Blueberry Cake

A timeless combination, made simple in a breadmaker!

This is simple! Place all the cake mixture ingredients together in a bowl and then gently fold in your blueberries. It’s then all down to the breadmaker for an hour! To finish, prepare a simple lemon glaze to drizzle over the finished cake.

Remove the kneading blade from the bread pan and line with parchment paper or a 2lb loaf tin liner.

Place the flour into a bowl, and then lightly rub in the butter.

Stir in the caster sugar, nuts and lemon zest.

Beat in the eggs and milk, mixing well.

Gently fold in the blueberries.

Spoon the mixture into the lined bread pan and level the surface.

Select the BAKE only menu for 1 hour on your breadmaker. Press start.

After baking, test with a skewer in the centre of the cake, it should come out clean. Press the timer pad on your breadmaker for another 5-10 minutes if the cake requires more cooking time.

Leave to cool on a wire rack. Meanwhile, make the icing by comibing the icing sugar with 1-2 teaspoons of lemon juice to make a glacé icing. Drizzle over the cooled cake.
