This gorgeous Lemon and Blueberry cake is great for puddings and afternoon tea. The sweet blueberry compliments the tangy lemon flavour leaving you with a colourful moist loaf.

Steps

Breadmaker Prep

Remove the kneading blade from the bread pan and line with parchment paper or a 2lb loaf tin liner.

Mix

Place the flour into a bowl, and then lightly rub in the butter.

Stir in the caster sugar, nuts and lemon zest.

Beat in the eggs and milk, mixing well.

Gently fold in the blueberries.

Spoon the mixture in to the lined bread pan and level the surface.

Bake

Select the BAKE only menu for 1 hour. Press start.

After baking test with a skewer in the centre of the cake, it should come out clean. Press the timer pad for another 5-10 mins if the cake requires more cooking time.

Leave to completely cool on a wire rack.

Meanwhile, make the icing. Combine the icing sugar with 1-2 teaspoons of lemon juice to make a glace icing. Drizzle over the cake.
