100g Pecans
60g Almonds
40g Desiccated Coconut
30g Raw Cacao Powder
75g Pitted Medjool Dates Soft
3 tbsp Coconut Oil Softened
1 tbsp Vanilla Extract
Filling
5 Avocado Peeled and chopped
1 tbsp Matcha Green Tea Powder
150g Maple or Coconut Syrup
5 Limes Lime Juice
5 Limes Lime Zest
100g Coconut Oil
150g Melted Cacao Butter
Decoration
Thick Slice of Lime
Coconut Chips
Grated Lime

The combination of sharp lime and rich creamy avocado makes an incredible creamy vegan dessert. Coconut, cacao butter and lime are a winning combination and give this tart a fresh tropical flavour.  The addition of matcha powder provides a wealth of antioxidants known to support immune function. Matcha powder is a wonderful stress buster. Rich in the amino acid L theanine that has been shown to reduce stress and anxiety by lowering the effects of the sympathetic nervous system associated with fight or flight response. Matcha helps to promote levels of GABA in the brain, a neurotransmitter associated with calm, focus and concentration.

Steps

Done

Place the nuts in the food processor. Select Manual (M1) and grind until fine. Add the remaining ingredients for the base and process until the mixture begins to stick together. You may need to add a splash of water.

Press the mixture into a greased spring form cake tin 20cm / 8 inches. Chill while you make the filling.

For the filling simply place all the ingredients together in the food processor and blend until smooth and creamy. Pour over the base and chill for 3 hours until set. You can also place in the freezer to firm up if wished.

Remove the tart from the tin and decorate with candied lime, lime zest and coconut chips.

The tart will keep chilled in the fridge for up to 1 week or can be frozen for up to 3 months.
