Whisk together the chickpea flour, salt, 2 tbsp of olive oil, and water with some black pepper until smooth. Leave the socca batter to rest for 30 minutes.

Prepare the vegetables and add to an oven-proof dish with the harissa paste, 1 tbsp olive, and some salt and black pepper. Preheat the convection oven to 180*C. Cook in the oven for 20-30 minutes until tender and crisp, flipping over halfway through.

Line and then grease a large, round oven proof dish (30cm) and pour in the socca batter. Bake at 180*C for 10 minutes until golden and crisp on top.

Top the baked socca base with the vegetables and use grill 1 function to grill for 5 mins.

Serve with fresh rocket, basil leaves, a drizzle of tahini and some sesame seeds.
