150g Mixed Salad Leaves With tender fresh herb sprigs
175g Mixed seedless green and black grapes
250g Halloumi 'Light' Halloumi for low fat option
75ml Oil and Lemon Dressing
1/2 Red Apple Sliced
Black Pepper

This simple but delicious combination of grilled halloumi, juicy grapes and fresh salad leaves is great for all occasions, from work lunchbox to family sharing dish.

Pre-heat grill 1.

Thinly slice the halloumi cheese. Please on the enamel tray and grill on high for 10-12 mins or until golden - flip pieces 1/2 way through.

Toss together salad leaves and herb sprigs with the grapes and apple slices, transfer to a large serving plate.

Arrange the grilled cheese over the salad and pour over the oil and lemon dressing.

Serve whilst the cheese is still hot with crust walnut bread.
