A fresh, healthy salad for all occasions from simple work lunch-box to sharing dish at a gathering. The mix of grilled aubergine, mint, garlic and coriander couscous is sure to get your tongue tingling with flavour.

Steps

Pre-heat grill 1.

Cut the aubergine into large chunky pieces and toss them in olive oil.

Season the salt and pepper and spread them on to the enamel shelf. Place in the higher shelf position and cook on Grill 1 + Steam 1 for 8-10 mins turning 1/2 way.

Cook the couscous according to the pack instructions.

Stir the grilled aubergine and mint into the couscous, serve immediately with a crisp green salad and sprinkle with pomegranate seeds if desired.
