Ingredients

Adjust Servings:
75g Unsalted Butter
225g Gluten Free Self-Raising Flour
Pinch Salt
1/2 tsp Baking powder
1 tbsp Golden Caster Sugar
50g Sultanas
75ml Milk
1 Egg Beaten to glaze

Serve with clotted cream and good jam or fruit compote.

 

Dish: baking tray 30 x 21.5cms (12” x 8”), greased

Oven accessory: wire shelf in lower position

Preheat oven on CONVECTION 200ºC

Stir the flour, salt and baking powder together. Rub in the butter until the mixture resembles fine breadcrumbs.

Stir in the sugar and sultanas. Make a well in the centre, and stir in enough milk until the mixture comes together into soft dough adding more milk if necessary.

Roll the dough on a floured surface to 2.5cm (1” thick. Cut out circles using a 4cm (1 ½”) cutter and place on baking tray

Place baking tray on wire shelf and cook on CONVECTION 200ºC for 10-12 minutes until golden and well-risen.

Cool on a wire rack.
