Gluten Free Coffee and Walnut Cake

This was one of our favourites in the Panasonic kitchen. Gluten free cakes are notoriously dense and (forgive us) less tasty. This, however, is a wonderfully light crumbly cake with very little added sugar.

 

Panasonic Bread Machine, lined with a 2lb loaf tin liner

This cake can be quite crumbly and cuts better on the second day.

Steps

Cream the butter and sugar together until light and fluffy.

Add the eggs a little at a time, beating well after each addition

Fold in the flour, baking powder and the walnuts mixing well.

Pour into the lined bread pan and bake for 1 hour or until a skewer comes out clean.

Allow to cool in the tin for 15 minutes before turning out and cooling on a wire rack.
