Garlic Herb Smashed Potatoes

These potatoes are a great change from just plain mashed potatoes. “Smashed Potatoes” also known as BATATAS A MURRO is a traditional Portuguese Dish. Infuse them with Rosemary, Garlic  and serve them with main course.  The beauty of these smashed potatoes is that they are crispy on the outside, soft on the inside with herby flavours . Just ideal as a side dish for your holidays or festive menu’s.




Prick the potatoes with a fork several times. Place them in a microwave save bowl filled with water. Cover with bowl with a microwave lid and cook for 14- 15 minutes or until tender.


Drain potatoes and allow it cool down for 5 minutes.


In a small bowl, add Melted Butter, Olive Oil, minced garlic and herbs. Mix well and set it aside.


Using your palm or back of a fork gently smash the potatoes in a way they are in one piece.


Preheat the microwave oven to 180 C. On the baking sheet place the smashed potatoes , rosemary and garlic cloves, generously drizzle the herby mixture over them, sprinkle salt and pepper and bake for 15 minutes.


Sprinkle a generous serving of grated parmesan or hard cheese on the potatoes and return the smashed potatoes to the oven for 10-14 minutes until they melt and render a crispy texture on the top.

750g Baby Potatoes
1/4 Cup Melted Butter
2 tsp Olive Oil
4 Garlic Cloves Minced
1 tbsp Mixed Herbs
Other ingredients
1/2 Cup Freshly Grated Hard Cheese or Parmesan
3 Garlic Clove
Fresh Thyme Leaves
Sour Cream For serving
