Creamy Cauliflower Soup with Kale Crisps

Cauliflower Soup

• Mix olive oil with the chopped onion in a microwave safe pan. Cook for 5-6 minutes on a high heat.
• Chop cauliflower roughly, add salt, pepper and stock.
• Cover the pan with a lid and cook on a high heat 15-20 minutes until the cauliflower is soft. Add more time if needed.
• When cauliflower is soft - add double cream and cheese, cook for additional 3 minutes.
• Blitz with a hand blender until smooth and creamy.
• Add boiled water if the consistency is thick.
• Set aside and make kale crisps.


Kale Crisps

• Cut kale leaves roughly and mix with olive oil, salt and pepper.
• Place in a microwave safe pan and cook 8-10 minutes until crisp.


Serve the soup warm topped with kale crisps, roasted hazelnuts and a drizzle of olive oil.
