Ingredients

Adjust Servings:
15g Dried Porcini Mushrooms
750mls Vegetable Stock
25g Butter
2 Garlic Cloves
4tbsp Fresh Parsley
400g Chestnut Mushrooms Chopped
150mls Dry White wine
45ml Double Cream
to taste Salt and Black Pepper

*Mouth Waters* This soup is an absolute classic. It has kept us warm and satisfied for many many years. Here’s our tried and tested microwave recipe for all those mushroom soup lovers. We hope you enjoy this as much as we did!

Preparation

Soak the porcini mushrooms in 300mls of vegetable stock for 20mins. After, strain the porcini mushrooms and coarsely chop. Add the soaking liquid to the remaining stock.

Place the butter, garlic and parsley in a bowl. Place this bowl on the base of the oven and cook on HIGH MICRWOAVE for 1min.

Add the chopped chestnut and porcini mushrooms to the parsley mixture. Cook this on MEDIUM MICROWAVE for 5mins or until softened, stirring halfway.

Blend

Add wine and the stock then cover & cook on MEDIUM MICROWAVE for 15mins. Allow to cool then place in a liquidiser and puree until smooth.

Return the soup to the bowl. Stir in cream and season to taste.

Serve

When ready to serve, cover and cook on MEDIUM MICROWAVE for 3mins or until piping hot.
