500g Apricot Halves Pitted
75g Sugar
75ml Water
200g Cream Cheese
75g Ginger Nut Biscuits Crumbled

Apricots baked in the microwave oven with cream cheese and crumbled ginger nut biscuits make a sweet, scrumptious dessert dish to share.

Steps

Put the apricots in a dish so they fit snug. Mix the sugar and water together and pour over the apricots. Cover with cling film and cook on medium microwave for 5 mins.

Drain the syrup from the dish and put to one side.

Preheat the oven to 200◦C and GRILL 2 .

Place the apricots on the lower shelf position and bake for 5 mins.

Mix the cream cheese until soft and add 90mls of the syrup, spoon over the apricots and add the ginger nut crumb on the top.
