Coffee, Chocolate and Roasted Pine Nut Sweet Bread

Create something a little different with this Coffee, Chocolate and Roasted Pine Nut Bread. We love this recipe here in the Panasonic Kitchen as the bread comes out a lovely dark brown colour and tastes great!




Place the yeast in the bread pan followed by the flours, cocoa powder, salt, sugar, coffee, milk, egg and yolks, orange zest and butter and set your bread maker to the Basic dough setting.


When the cycle is complete remove the dough from the bread pan and place on to a lightly floured surface. Knock it back gently, press the dough flat and sprinkle over the roasted pine nuts and the chocolate chunks. Fold the dough back into itself so the nuts and chocolate run through the dough evenly.


Shape as one loaf or individual buns and place in a round baking tin lined with parchment and leave to prove for at least 30mins or until doubled in size


Bake at 180˚C for 30-40min until it springs back when pressed.

1 tsp Yeast
200g Strong White Flour
200g Pasta Flour
1 tsp Cocoa Powder
1/2 tsp Salt
2 tsp Sugar
1 Shot Good Strong Coffee (1espresso or 2tsp instant coffee dissolved in a splash of hot water)
140ml Milk
1 Egg
2 Egg yolk
Half an Orange Grated orange zest
Butter at room temp
Step 2
50g Roasted Pine Nuts (baked in an oven for 10min at 150˚C until golden)
125g Dark Chocolate In Chunks
