Ingredients

175g Butter
175g Caster sugar
3 Medium Eggs
200g Self raising flour
100g Desiccated Coconut
150g Apricot Chopped
3 tbsp Milk

Oven accessory: wire shelf in lower position + anti spark ring

Dish: 7” round cake tin, bottom lined

Steps

Cream the butter and sugar together until light and creamy.

Gradually beat in the eggs. Fold in the flour and desiccated coconut.

Add the chopped apricots and finally stir in the milk,

Pour into the prepared cake tin and cook on CONVECTION 160°C + SIMMER POWER for 25 mins.
