Ciabatta and Parmesan Crusted Fish

This fresh crusted fish recipe is a great way of getting your omega 3, which is recommended for the health of your skin and body. This light dish is perfect for January as your body recovers from all the chocolate from Christmas. Pair with new or mashed potatoes and some yummy veggies.

Accessory:  Wire shelf in the lower position

Dish: Shallow oven proof dish 20cmx25cm

Steps

Preparation

Place the ciabatta and parsley in a food processor and process to a fine crumb.

Add the oil, lemon zest, Parmesan, salt and pepper and mix to combine.

Arranging

Arrange the fish fillets in a glass shallow ovenproof dish. Mix the lemon juice and mayonnaise together and spread over each fish fillet.

Cooking

Press the crumbs on top and cook on GRILL 1 + MEDIUM MICROWAVE for 15-20 mins or until the topping is crisp and the cod is cooked.

Serve with new or mashed potatoes with some yummy veg!
