Preheat oven to 170C.

Line the enamel shelf with parchment paper and set aside.

Place all the ingredients in a large bowl and mix well.

Portion out the cookies into rounded tablespoons or larger for bigger cookies and place on the prepared enamel shelf leaving enough space between them to spread.

Bake for 8-10 minutes or until edges of the cookies are firm. They will still look soft don't worry they will continue to cook as they cool.

Allow the cookies to cool for 2 minutes on the baking sheet then transfer them to a wire rack to cool completely.
