1 1/2 - 2 kg boneless shoulder Pork
BBQ Sauce
140 g Tomato Ketchup
4 tbsp Red Wine Vinegar
1 tbsp Worcestershire Sauce
3 tbsp soft dark brown Sugar

BBQ Pulled Pork

This BBQ Pulled Pork recipe is tasty and versatile, and all made easily in the microwave oven with little effort! Finish off in a bun, on nachos or over a salad!

Pre-heat the oven to Convection 140°C.

Scatter the onions and bay leaves in the bottom of the roasting tin.

Mix together the mustard powder, paprika and some salt and pepper. Rub this all over the pork.

Place the pork, rind side up, on top of the onions and pour 200ml of water into the bottom of the roasting tin. Wrap well with foil and bake for 2 hours per kilo. When cooked, remove the pork from the tin and discard the bay leaves.

In a microwaveable bowl, mix together the ingredients for the BBQ sauce; add the onion and juices from the tin and cook on High Microwave for 5 minutes. Stir to make sure the sugar has dissolved.

Return the pork to the roasting tin.

Pre-heat the oven to Convection 180°C

Blitz the sauce in a food processor until smooth. Pour 1/2 of the sauce over the pork and return to the oven for a further 10-15 minutes or until starting to char.

Remove the pork from the roasting tin and place on a serving plate. Peel off the skin. Shred the pork leaving some of the meat in chunky pieces. Add some more of the BBQ sauce to the pork and toss together.
