This delicious dish is the perfect way to make breakfast more exciting if you have 20 minutes to spare. A different way to eat your eggs in the morning with this baked eggs with vegetables and cheese recipe, easily made in your microwave oven.

Steps

Wilt the spinach in a buttered pan.

Lightly oil a 10 ounce ramekin dish or coat with non-stick spray.

Add the spinach into the ramekin dish along with the peppers, onion and cheese.

Add the cream and crack in the egg on top, cover with a little more bell peppers, onion and cheese.

Put your ramekin dish into a ban marie and fill the ban marie with hot water.

Bake for 15-20 minutes at 180C.

Serve with buttered toast, veggies or more cheese.
