1 Large Sweet Potato Thinly Sliced
2 Sticks of lemongrass Bruised and finely chopped
2.5cm Piece of Ginger Finely Chopped
2 Garlic Cloves Finely Chopped
1 Large Red Chilli Cut into fine strips
1 tsp Sesame Oil
150ml Hot Vegetable Stock
150ml Light Coconut Milk
6-8 Lime Leaves Or 1 Lime
2 x 150g Salmon Fillets

This delicious Asian salmon and sweet potato traybake dish is a mix of beautiful oriental flavours. Perfect for a nice Friday night dinner in.

Arrange the potato slices, over lapping in a ceramic roasting dish.

Mix the sesame oil, stock, coconut milk and 2/3 each of the lemon grass, ginger and garlic together, pour over the potatoes and tuck in the lime leaves and scatter the chillies over the top.

Place in the oven and cook on CONVECTION 190C and SIMMER MICROWAVE for 10 mins.

Place the salmon fillets on the top and scatter over the remaining lemon grass, ginger and garlic, cook for a further 10 min on CONVECTION 190C and SIMMER MICROWAVE.
