250g Self raising flour

Soft Brown Sugar

Cinnamon

2 rounded tbsp Demerara Sugar

1 AppleQuartered, with skin and core

2 Large EggBeaten

1 tsp Baking powder

225g Blackberries
Directions
This is a gorgeous loaf perfect for pudding or afternoon tea. The colour of the blackberry beautifully contrasts the soft brown centre making the loaf look great! The burst of colour brings a burst of fruity flavour which is paired perfectly with natural yogurt or cream!

PreparationBeat the eggs and quarter the apple, without removing the skin and core. |

Put the flour, butter and sugar into a bowl. Rub together with your fingers until the mixture looks like bread crumbs. Set aside 5 tbsp of this mixture and combine with the spice and Demerara sugar. This will be the topping. |

Roughly grate the apple down to the core and combine with the eggs. |

Stir the baking powder into the flour mix and quickly and lightly stir in the egg mixture being careful not to over mix. |

Carefully fold in ¾ of the berries and spoon the mixture into the prepared bread pan. Scatter the remaining berries on top and sprinkle the topping on. |

CookingSelect 'BAKE' and set the timer for 1 hour. |

CoolingAllow to cool on a drying rack. Then serve with fresh cream or natural yogurt. |
