Mix the oil, onion and garlic together in a microwave proof dish and heat on medium for 5 |

Add in the sweet potatoes and peppers and cook again at medium for another 5 |

Add the rest of the ingredients and heat on medium for 10 minutes, stir and then again for another 10 minutes. By now the potato should be soft and the chilli ready to serve in tortillas with avocado, fresh coriander and a squeeze of lime. |
