Tofu & Cauliflower Masala






Heat the microwave to grill 1 function. Chop the cauliflower into florets and the tofu into cubes. Toss in a little olive oil, ½ tsp ground turmeric, 1 tsp garam masala and grill (grill 1) for 20-30 minutes until golden and crisp. Remove from the microwave and keep warm.


Using the microwave function, add the red onion, garlic and ginger to a dish with 2 tbsp olive oil. Heat at high for 5 minutes until soft. Stir in all of the herbs, spices and sugar with some salt and black pepper and heat for another 1 minute. Add in the red pepper, chopped tomatoes and coconut milk and heat for 10-15 minutes until fragrant.


Stir the cauliflower and tofu into the masala sauce, saving some for the top. Serve warm with rice, fresh herbs, coconut yogurt and fresh chilli.

1 (280 g) Block of extra firm tofu

1 Red Onion thinly sliced
3 Garlic Cloves chopped
1 inch Root Ginger grated
1 tbsp Coconut sugar
½ tsp Smoked Paprika
1 tsp Ground Cumin
1 tin (400 g) Chopped Tomatoes
1 tin (400 g) Coconut Milk
