Mix all the ingredients apart from the cheese in a bowl and yield into 8 fritters.

Place on a plate and cook using the Micro Power setting for 2 minutes and 20 seconds on a high heat. Check they’re piping hot (be careful not to burn yourself!) and top each fritter with some grated cheese.

Place on the enamel tray and use the “Grill” setting, on a high heat, for 3-4 minutes until cheese is melted and enjoy!

170 g Cooked quinoa
2 Medium Eggs
1 Grated Carrot
1 small Onion finely chopped
110 g Spinach
75 g Ground Almonds
1 tbsp Flaxseed
Salt and Pepper to taste
