150g Icing Sugar

1 Lemon Juiced and Zest

This gorgeous breadmaker recipe is a gluten free alternative to the widely loved carrot cake! This recipe is great for tea parties and pudding! Whoever said gluten free couldn’t be tasty has been proven wrong. You’ll need a Panasonic Bread Maker, Lined with a 2lb Loaf tin Liner.

MixtureBeat the butter and sugar together until light and fluffy. Add the grated carrots and sultanas. Beat the eggs then add the eggs in a little at a time. |

Add the flour, cinnamon, nutmeg, baking powder and the chopped nuts mixing well. |

BakingPour into the lined bread pan and bake for 50-55mins or until a skewer comes out clean. |

Cooling and FinishAllow to cool in the tin for 15 minutes before turning out and cooling on a wire rack. |

Meanwhile make the icing by adding enough lemon juice to the icing sugar to make a thick paste. Spread onto the cooled cake and grate over the zest of a lemon. |
