Gluten Free Apple and Ginger Cake



Adding to our extensive gluten free menu, this Gluten Free Apple and Ginger Cake is a perfect sweet summery pudding. It can be enjoyed cold and warm, fresh out of the bread pan.




Warm the butter and sugar in the microwave until just melted.


Sieve the flour, baking powder and spices into a bowl. Add the syrup mixture and the beaten eggs.


Add the chopped apple and ginger and mix well.


Remove the kneading blade from the bread pan and line the bottom with a 2lb loaf tin liner or parchment paper.


Carefully pour in the mixture and sprinkle the demerara sugar on the top.


Select the bake menu and enter 1 hour 5 mins on the timer.


After baking test with a skewer. If the skewer comes out clean the cake is cooked. If it is still a little sticky leave it in the bread pan with the lid closed and it should cook through during the stand period

100g Butter
200g Golden Syrup
300g Gluten Free Self-Raising Flour
½ tsp Gluten Free Baking Powder
1 tsp Cinnamon
½ tsp Cloves
2 Medium Eggs Beaten
2 Granny Smiths Dessert Apples Finely Chopped
100g Stem Ginger Drained and Finely Chopped
1 tbsp Demerara Sugar
