Filo Pastry Fish Parcels

Filo Pastry Fish Parcels

Filo pastry fish parcels are a delicious and healthy alternative to battered fish. The fresh white fish and prawns are perfectly complimented by the flaky, crunchy pastry! Best served with fresh veg and a squeeze of lemon – a winner for the whole family!

Preheat the oven on CONVECTION 190°C.

Mix the dill with the soft cheese, add the lemon juice. Season.

Brush the 2 filo sheets with butter and lay one on top of each other. Cut in half. Repeat with the remaining two pieces of filo pastry.

Lay each piece of fish in the centre of a filo square. Spread some of the cheese mixture over the top of each piece of fish and top with a few prawns.

Draw up the edges of the filo pastry to make a parcel. Place on a baking tray. Brush with the remaining butter and scatter the Parmesan cheese over the top.

Bake for 12-15 mins or until the fish is cooked and the pastry golden.
