Directions

Steps

Add the chicken to a bowl, add the seasoning, either pre-made or the recipe as written. Stir to coat and leave for 5 minutes. |

Place the chicken on the Wire Rack over the Enamel Tray. Place in the microwave and select Grill - press twice for Grill 2 Medium. Cook for 12 mins, then turn the chicken over and cook for another 12 mins. Caution: will be very hot so use oven gloves to handle the dishes. |

Meanwhile, make the Guacamole by adding the avocado to a bowl and roughly mashing it with the back of a fork, add the lime, salt, coriander and chilli flakes if using. Stir together then add the tomatoes and carefully combine you don’t want to mash the tomatoes too much. |

When the chicken is done, remove from the oven (check it’s piping hot) place on serving dish and keep warm. |

Select Convection on the oven and temperature 180°C. then press start to pre-heat |

Wash the enamel tray and add the left over roast veg to it. Once the oven is ready add the veg and cook for about 10 mins. Check it’s hot before adding to the chicken and stirring together. |

Finally heat the tortillas on a microwavable plate for 30-40 secs. |
